About 13 percent of Taiwan's residents do not eat meat. But with its capital's large array of vegetarian options, it's clear this contingent will never want for variety. Taipei's premiere luxury hotel, Le Meridien, offers guests a thrilling vegan menu that includes a soba noodle station, freshly prepared tofu with vegetables, and congee (rice pudding) with plenty of toppings. Elsewhere in town, the massive Shilin night market illuminates the landscape and fill tourists' bellies with every type of dumpling and fresh fruit smoothie imaginable.
