Seattle was hugely instrumental in laying the groundwork for café culture in the United States, and an affinity for vegetarian menu options is a major driver of that trend. In a study by food blog GrubHub, people in the Seattle-Tacoma-Bellevue area were 54 percent more likely to order off of the vegetarian menu than the national average. The bustling Cafe Flora in Seattle's charming Madison Park neighborhood is perhaps the clearest evidence of this, with creative dishes like Portobello mushroom Wellington and summer squash blossom pizza served in an elegant yet casual patio setting.
