Restaurant DOM's Heart of Palm Fettuccine
According to Brazilian chef Alex Atala, the goal at DOM restaurant in São Paulo is to use gourmet food to take people outside of their comfort zones. To that end, the eatery not only features distinct ingredients and dishes native to Brazil, but also unorthodox additions like insects.
"The main reason for me to use them is because they are truly full of flavor," Atala said. "I believe tasty insects can and should be served in restaurants. Just as important, though, insects are a source of protein and potentially a dietary supplement for the more than 7 billion people in the world."
