Amanda Cohen, Dirt Candy, New York City
Amanda Cohen opened her New York restaurant Dirt Candy to put vegetables at the forefront of the meal. She says for years, vegetarian restaurants were about anything but the vegetables – lifestyle, politics, health. Dirt Candy is none of those. The menu includes Korean fried broccoli, Jalapeno hush puppies (served with maple butter) and Brussels sprout tacos.
Cohen was the first vegetarian chef to appear on Iron Chef America, and she's the author of the first graphic novel cookbook to be published in North America, "Dirt Candy: A Cookbook."
