Naomi Pomeroy, Beast, Portland

Before opening Beast in Portland, Ore., Naomi Pomeroy ran an underground supper club called Family Supper using salvaged doors as tables and defrosting shrimp in the bathtub of her Northeast Portland bungalow. She ran a series of short-lived Portland cafes before returning to small family-style dinners at Beast, serving a six-course prix fixe menu.

The restaurant opened in 2007 and has racked up a series of awards, including local mentions as Restaurant of the Year and Chef of the Year. In 2014, the then-40-year-old won the James Beard Award for Best Chef in the Pacific Northwest.
