The full-flavored kale
Not only is it one of the most nutritious vegetables, but kale is also extremely cold-hardy and available fresh at farmer's markets well into the colder months.
Native to Europe, kale is high in vitamins and extremely rich in calcium. Researchers have found it to be a potent superfood for reducing cholesterol and heart disease and improving bone health and digestion. It's also part of a healthy Mediterranean diet, which – good news! – will keep your brain from shrinking.
