Zucchini cucumber salad

Zukes and cukes combine to make a refreshing late-summer salad. You've got to try this.

  • Yield: Serves 3-4
  • Prep time: 10 minutes

Here is a hearty green salad that's fresh and satisfying without being complex or time-consuming. It's also perfect for these hot remaining summer days as zukes and cukes are packed with water. What a delicious way to hydrate!


  • 1 cup apple cider vinegar
  • 2 tablespoons olive oil
  • 1 teaspoon granulated sugar
  • 1 teaspoon kosher salt, plus more as needed
  • Freshly ground black pepper
  • 2 large cucumbers
  • 2 large zucchini
  • 2 tablespoons finely chopped parsley


Whisk together the vinegar, oil, sugar, salt and half of the parsley.

Trim and fully peel the zucchini, removing all of the outer green. Cut the zukes into quarters lengthwise and then chop them.

Trim and score the cucumber. Slice the cucumber.

Combine the dressing and veggies in a large mixing bowl, mix to combine.

Garnish with remaining parsley and black pepper.
