Zucchini and micro greens salad
All the colors of the rainbow, with some edible flowers thrown into the mix.
- 1 zucchini
- 1/4 cup micro greens
- 1 teaspoon olive oil
- 1/4 teaspoon fresh lemon juice
- 2 edible flowers*
- Pinch of salt
- Freshly cracked pepper
Wash and trim the zucchini. Dry the zucchini completely before spiralizing.
In a mixing bowl, whisk together the olive oil, lemon juice and salt and pepper.
Add the zucchini and mix until completely coated.
Fold in the micro greens.
Add the zucchini to a serving bowl and then top with the petals from the edible flowers.
