Zucchini and micro greens salad

All the colors of the rainbow, with some edible flowers thrown into the mix.

  • Yield: Serves 1-2

Eating healthy is easy with this beautiful and fresh zucchini salad tossed with micro greens, fresh lemon and edible flowers*. Click here for tips on finding flowers you can eat!


  • 1 zucchini
  • 1/4 cup micro greens
  • 1 teaspoon olive oil
  • 1/4 teaspoon fresh lemon juice
  • 2 edible flowers*
  • Pinch of salt
  • Freshly cracked pepper


Wash and trim the zucchini. Dry the zucchini completely before spiralizing.

In a mixing bowl, whisk together the olive oil, lemon juice and salt and pepper.

Add the zucchini and mix until completely coated.

Fold in the micro greens.

Add the zucchini to a serving bowl and then top with the petals from the edible flowers.
