


Watermelon cucumber mint salsa
Sweet, tangy and refreshing, this watermelon salsa is a fresh and easy summer side dish that's great for entertaining.
I have to confess, for most of my life I ate watermelon one way only: straight up. But at a recent dinner party I served watermelon chunks with fresh mint, and I loved what that added to the already perfectly sweet and delicious melon. This salad adds just a few more ingredients, and is super light on the seasoning – making for a perfectly refreshing and easy to throw together summer side dish.
Ingredients
- 4 cups watermelon, cut into small cubes (1 small melon, or 1/3 of a large one)
- 1/2 English cucumber
- 1/2 red onion
- 6-8 mint leaves
- Dash of tabasco
- Squirt fresh lemon juice
- Dash of salt
Directions
Place diced watermelon in a medium-sized serving bowl.
Dice cucumber and onion finely, and add to watermelon.
Chop mint, and add to salad. Add seasonings and stir to coat. Serve chilled.
(Note: To easily dice watermelon, cut off ends of melon, stand it up, and cut down the sides to remove peel – you’ll have to cut in a curved motion following the line of the melon. Cut into thin 1/2-inch slices, stack and finely dice.)
