Veggie burger tacos
Here's a clever way to use up leftover veggie burgers when the bun-burger ratio just doesn't add up.
I love veggie burgers for a quick healthy meal, but have you noticed how the number of burger patties in a box is not the same number of buns in a bag? I am inevitably left over with one or the other. So here is a fun way to celebrate Taco Tuesday (or any other day when tacos strike your fancy), with all those leftover veggie burgers!
- Corn tortillas
- Veggie burgers
- Orange bell pepper, diced
- Corn salsa
- Red cabbage, chopped
- Avocado, sliced
- Cilantro, chopped
- Sour cream
- Cooking oil
Warm 1 tablespoon of cooking oil in a medium fry pan over a medium-high heat.
Add a veggie burger and fry it for about 4 minutes. You will need about one burger for every two tacos.
Stack up two corn tortillas in two separate piles. Chop up the veggie burger and divide it between the tortillas.
Top the tortillas with orange bell peppers, corn salsa, red cabbage, avocado, cilantro and sour cream.
