Vegetarian Greek tacos
A light, vegetarian taco 'nosh' that makes a great Mediterranean meal.
Here is the perfect summer taco. Part Mexican food and part Mediterranean, this tasty and healthy dish is great for when you want something light to nosh on these summer months.
- 1/4 cup sour cream
- 2 garlic cloves, minced
- 1 teaspoon thyme, minced
- 1 tablespoon white wine vinegar
- 1 cucumber
- 1/2 cup cherry tomatoes
- 1 avocado
- 3-5 tortillas
In a small bowl, whisk together the sour cream, garlic, thyme and vinegar. Salt and pepper to taste.
Peel the cucumber, slice it lengthwise, and again. Chop the cucumber.
Halve the cherry tomatoes.
Halve and seed the avocado. Using a butter knife, slice the meat into chunks while still in the skin.
Add arugula to the tortillas and divide the cucumber, tomato, and avo amongst them.
Drizzle with the sour cream dressing.
