Vegan Italian wedding soup
It's winter comfort food in style.
You don't have to get married to enjoy this delicious vegan soup. It has it all! Meatballs, pasta, and flavor. What is not to love? Oh, and it is easy to make.
- 15 ounces diced tomatoes
- 6 cups vegetable broth
- 3 ounces Israeli couscous
- 16 ounces vegan meatballs
- 2 cups chopped spinach
- Salt and pepper
Add tomatoes, juice and all, to a large sauce pot. Add in broth.
Bring to a simmer.
Add in pasta and meatballs and cook until pasta is ready.
Season with salt and pepper.
Add in spinach and remove from heat.
