Vegan garlic mayonnaise
A quick and easy egg-free tofu spread that’s perfect for beginners and a favorite of the plant-based crowd.
After trying several vegan mayo recipes and tossing lots of wonderful ingredients in the trash, I finally decided to give silken tofu a chance. Tried one version, tweaked it just a tad, and voila – the absolute perfect vegan garlic mayo.
- 16 ounces silken tofu
- 4-5 tablespoon olive oil
- 3 tablespoons dijon mustard
- 1-2 tablespoon apple cider vinegar
- 2 garlic cloves, minced
Combine all ingredients in a tall glass measuring cup or small bowl.
Use an immersion blender to whip until smooth. Taste, and add a dash of salt or more mustard, if desired.
Refrigerate for up to a week.
