


Vegan chili tacos
These spicy, crunchy vegan tacos taste just like the real thing.
It was another family member taking the 30-day vegan challenge that inspired this wonderful dinner. And boy was I grateful! It’s super easy to put together and tastes absolutely delicious, with none of the heaviness of meat, and a lower price tag, to boot.
As someone who does occasionally enjoy meat dishes, I was hard pressed to note the difference between this meat-substituted version and the real thing. You can absolutely make this dish for a mixed crowd – the omnivores and vegans alike will relish the flavor, the crunch and the fun of these tacos.
Ingredients
- 1 container vegetarian crumbles (I used Lightlife)
- 16 ounces salsa
- 2 cups shredded lettuce
- 1 red pepper, diced
- 1 tomato, diced
- 1 avocado, diced
Directions
Spray pan with non-stick spray and heat on medium heat.
Add faux meat crumbles to pan and stir for several minutes. Add salsa and stir until heated through.
If you like a crunchier taco, heat them in the oven for 2-3 minutes. Place a heaping spoonful into each taco and top with lettuce, pepper, tomato and avocado.
Serve immediately.
