


Tropical ice cream sundaes with spicy papaya
Take your taste buds to a tropical island with these cool and unusual ice cream sundaes.
I may be a purist with ice cream flavors, but when it comes to toppings, I’ve got no issues piling on the goodness. In these unique sundaes, a slew of tropical flavors join together to form a fabulous dessert. Sweet and spicy caramelized papaya chunks, salty pistachios, sweet coconut flakes, and smooth vanilla bean ice cream. Let’s all scream for sundaes!

Ingredients
- 1/2 medium papaya
- 1/4 cup maple syrup
- 1 teaspoon chipotle pepper
- 1 teaspoon cinnamon
- 1/2 gallon vanilla ice cream
- 1/2 cup sweetened coconut flakes
- 1/4 cup crushed pistachios
Directions
Preheat oven to 425°. Lay papaya half cut side up in glass baking pan. Sprinkle with maple syrup, pepper and cinnamon.
Roast for 20 minutes, or until edges just begin to darken. If juices start to burn before that, add a few spoons water to the pan. Allow papaya to cool, and then cut into chunks.
Scoop ice cream into sundae dishes, top with roasted spicy papaya chunks, coconut, and pistachio bits. Serve immediately.
For an extra spicy dish, sprinkle some pepper and cinnamon over the ice cream.
