Triple chocolate chili cookies

Chili-infused dark chocolate cookies drizzled with a sweet, spicy chocolate glaze.

Can you say chocolate chili five times fast? Didn’t think so. But can you eat five of these chocolate chili cookies fast? Heck yeah.

I’ve had so much fun playing around with different flavored chocolates in my baking, and this spicy chili chocolate from DAGOBA was no exception. All the cookies needed were a custom-spiced glaze to top them off and they were perfectly chocolate chili. Chocolate chili chocolate chili chocolate chili...

Ingredients

    Cookies:

  • 1 cup brown sugar
  • 1/2 cup white sugar
  • 1 cup butter or Earth Balance
  • 2 eggs
  • 1 tablespoon vanilla
  • 2 tablespoons soy or coconut milk
  • 2 cups white whole wheat flour
  • 2/3 cup DAGOBA cacao powder
  • 1 teaspoon baking powder
  • 1 teaspoon cinnamon
  • 1 teaspoon chili powder
  • 1 bar DAGOBA xocolatl chilies & nibs
  • Glaze:

  • 1 cup powdered sugar
  • 1 tablespoon cocoa
  • 1 teaspoon chili powder
  • 1 teaspoon cinnamon
  • 3 tablespoons soy or coconut milk

Directions

Preheat oven to 350°. Line baking sheet with parchment paper.

Beat sugar and butter for 2-3 minutes. Add eggs, one at a time, and beat until light and fluffy. Add vanilla and milk, and mix until incorporated.

Add dry ingredients and mix well.

Finely chop the chocolate bar, and add to cookie batter.

Use a small cookie scoop to place mounds on the parchment paper. Press down lightly on each one. Bake for 10 minutes. Allow to cool for a few minutes, and then transfer to wire rack to cool completely.

Stir together glaze ingredients until smooth. Drizzle over cooled cookies, and allow glaze to harden before serving (if you can wait, that is).
