Tofurkey veggie wraps

Whole grain tortillas with spicy faux sausage are a great lunch-on-the go or party food.

Tortillas hold a very dear place in my heart (read: stomach). Lighter than traditional bread, and as versatile as, well, sliced bread, tortillas offer a great alternative for party "pickups" or an easy lunch on the go option.

This is an "anything you’ve got in the fridge" kind of recipe. Arugula, romaine or spinach will work just as well as the spring mix, and you can use colored peppers, shredded carrots, sliced mushrooms, or any vegetable you like in the filling. Mustard not your thing? Try a spicy mayo, or simply shmear the avocado on the wrap and sprinkle with garlic powder and black pepper before layering the rest of the ingredients.

Ingredients

  • 3 multi-grain tortillas
  • 2 Italian-style Tofurkey sausages
  • 1 avocado, sliced
  • 1/2 red onion, sliced
  • 1 pound spring mix
  • brown mustard
  • 1 red pepper, thinly sliced

Directions

Preheat oven to 400° F. Lay tortillas directly on oven rack for 2 minutes, or until they puff up and begin to turn brown. Remove from oven and place on wire rack to cool for a few moments.

Spread each tortilla with brown mustard, and then pile on a handful of spring mix, tofurkey slices, avocado, onion and pepper.

Tightly roll up the wrap, and then cut in half diagonally. Stick a decorative toothpick in the center to hold it together, if necessary.
