Strawberry mint shooters
These (non-alcoholic) juice shots are refreshing, fruity and perfect for your next party.
At a friend’s wedding recently, I was standing with the bride’s mom, Dottie, a Southern belle to the core, and one who knew food and flavors like the back of her hand. When a waitress handed us peach shooters, she knew from the first taste that there was mint in them. Skeptic that I am, I had to ask the waitress to confirm the presence of mint. Clearly my palate is not as refined as I thought it was!
But as soon as I got home, I played around to create my own fruit shooter using strawberries. The way I see it a good Southerner shouldn’t cook with with peaches until it’s peach season. I’m hoping my adherence to the rules will redeem me from my flavor faux pas! (And teach me to be a little more trusting of those super sharp Southern cooks!)
- 1 pound strawberries, hulled
- 1/2 cup frozen pitted cherries
- 3 small clusters mint leaves
- 2/3 cup pineapple or orange juice
- 1/4 cup honey
- Extra mint leaves and strawberries for garnish, optional
Combine all ingredients in food processor, and process until smooth (scrape down the sides to check for large pieces).
Transfer to a pitcher or other container with a spout for easy pouring. Fill shooter glasses almost to the top (I found plastic ones at the dollar store, perfect for a party!). Place a small mint leaf at the top of each one, if desired.
