Spicy roasted sweet potatoes
A nutritious side dish that’s sweet and filling with just the right amount of kick.
There are folks around here who just can’t seem to get enough of sweet potatoes, from fries to pies to soups to salad. What I love about this new take on sweet potatoes is that it adds the element of spice to a well-loved sweet and sticky side dish.
I drizzled a bit of pure maple syrup over these sliced sweet potatoes once they were done. Gave them a gorgeous sheen, and a sweet, rich and earthy finish. Perfect!
- 3 medium sweet potatoes
- 1/3 cup brown sugar
- 1/2 teaspoon cayenne pepper
- 1 teaspoon cinnamon
- Olive oil
- 1 teaspoon sea salt
- Maple syrup, for drizzling
Preheat oven to 375° F. Peel and slice sweet potatoes into thin discs.
Toss in large bowl with a drizzle of olive oil and seasonings until all slices are coated.
Stack sweet potato slices upright in casserole dish and cover tightly. Bake for 45 minutes. Uncover, spoon extra liquid from bottom of pan over potatoes, and bake an additional 15 minutes.
Before serving, drizzle with maple syrup.
