Sesame broccoli with cauliflower rice
Eating your veggies will never be easier than with this vibrant, wholesome Asian-inspired meal.
This fully vegged-out Asian-inspired dish is free of gluten and grain, but rest assured it's still big on flavor. It uses cauliflower rice and a light, gluten-free teriyaki sauce (find it in the gluten-free section of your grocery store) and is topped off with just a pinch of zesty chili flakes., which can be easily omitted if you're not a fan of heat.
Ingredients
- 1 head cauliflower
- 1 tablespoon sesame oil
- 4 cups broccoli florets
- 1/2 cup gluten-free teriyaki sauce
- 1 teaspoon sesame seeds
- Pinch red chili flakes
Directions
Wash and dry the cauliflower, trimming off the florets. Shred the cauliflower florets in a food processor or with a grater, by hand.
Warm the sesame oil in a large saute pan, add in the cauliflower and cook it over a medium-high heat until tender. Don't let it get soggy. Set aside.
In another saute pan, add in the teriyaki sauce and chili flakes. Warm over a medium-high heat, then add in the broccoli, cooking until just tender.
Plate the broccoli over the cauliflower rice and top with sesame seeds.
