Sauteed greens and beans

It's the veggie-packed side dish that could totally pass for an entree.

  • Yield: Serves 4-5
  • Prep time: 10 minutes
  • Cook time: 10 minutes

This recipe makes a great side dish, but it's also pretty filling. I swear it wants to be an entree!


  • 1 cup shaved cabbage
  • 1 1/2 cup chopped kale
  • 1 cup shaved red cabbage
  • 15 ounces white beans, drained
  • 2 garlic cloves, minced
  • 2 tablespoons olive oil
  • Salt and pepper to taste


In a large skillet, warm the olive oil over a low heat.

Once the oil is translucent and watery, add in the minced garlic and saute until the mixture becomes aromatic, about 1 minute.

Add in the cabbages and kale, increase the heat to medium and saute until the greens are just tender.

Add in the white beans and saute for about 2 more minutes, until they are warmed up.

Salt and pepper as desired.
