Raspberry cookie parfait

This gorgeous dessert will send you immediately to your nearest produce market for fresh raspberries. Get there pronto!

Life is hard. Dessert shouldn't be! This raspberry parfait is a great way to elevate fresh berries and cookies to the next level. Also, make sure those fresh berries don't go bad. This simple trick keeps berries fresh for weeks!


  • 4 ounces fresh raspberries
  • 8 ounces whipping cream
  • 1 tablespoon sugar
  • 1 tablespoon vanilla extract
  • 6 small shortbread cookies


Add the whipping cream, sugar and vanilla extract to a large mixing bowl (or a stand mixer with the whisk attachment).

Mix on high until stiff peaks are formed.

Add the cookies to a small zipper bag, and smash them into chunks.

Using four small mason jars or glasses, layer the whipped cream, cookies, and raspberries.

Chill and then serve.
