Purple baby kale and fruit smoothie

When warm weather gets you craving something sweet and cold, this is the ticket. It's also a great energy booster.

I was driving to pick up my daughter from soccer practice on a surprisingly hot day in March when I had the thought to stop for ice cream. But then my conscience kicked in, along with my taste buds (which can only handle a few spoonfuls of sugary ice cream and then I’m done) and I did an about face, drove home, and threw together these delicious lavender-colored smoothies for the entire family.

Ice cream’s got nothin’ on these babies. They felt great going down, and they felt great an hour later. No guilt, just great taste and powerful nutrition.

Ingredients

  • 1 cup baby kale
  • 1 cup pineapple juice
  • 1 cup frozen blueberries
  • 5-6 frozen strawberries
  • 5-6 frozen peach slices
  • 1 frozen banana, chunked

Directions

Combine all ingredients in blender or Vitamix and process until thoroughly combined.

Serve in individual cups with straws.

Enjoy. And then repeat daily for an incredible dose of delicious vitamins and nutrients.
