Pastrami-wrapped tater tots with dipping sauce
These perfect party treats are a bite of heaven for meat and potato lovers
Contrary to fast-food marketing, the best way to enjoy meat is not super-sized – meat provides plenty of iron and nutrients, but when eaten in moderation. These adorable tater tot bites are a perfect snack to please those meat-and-potato lovers, while keeping portion control in check.
The dipping sauce is optional – the fresh herbs and the intense flavor of the deli meat provide plenty of flavor. But why not go all the way and provide some fun for those who love to dip?
- 1 pound frozen tater tots, partially defrosted
- 1/2 pound pastrami, cut into narrow, thin slices
- 1 cup flat leaf parsley, cilantro or celery leaf stems
- 1/4 cup apricot jam
- 1 tablespoon onion soup mix
- 1/4 cup ketchup
Preheat oven to 425° F. Line baking sheet with parchment paper.
Cut pastrami strips in half.
Lay an herb stem on a slice of pastrami, and roll up with a tater tot in the center. Secure with toothpick and place on baking sheet.
Bake 12 minutes, or until potatoes and meat are crispy and sizzling.
Serve hot with sweet and sour dipping sauce.
