Oversized mint crunch cookies

What’s better than a chewy cookie stuffed with melted chocolate chunks and a hint of mint? An oversized one!

Disclaimer: this recipe is completely and absolutely dedicated to the big, furry blue monster who has a thing for cookies. These oversized treats are sure to please the monster and all his little (and big) cookie-loving fans.

But foodies, don’t fear! If you’re more of a gourmet-wannabe who chooses "Chopped" over "Sesame Street," no worries – these cookies have a refreshing mint flavor, a slight nutty taste from the whole wheat flour, and a little crunch from the chocolate. There’s a gourmet aspect that’ll impress sophisticated palates, as well.


  • 1 cup butter or Earth Balance
  • 1 cup brown sugar
  • 1/4 cup white sugar
  • 1 package (2.8 ounce) vanilla pudding mix
  • 1 teaspoon mint extract
  • 2 eggs
  • 2 3/4 cup white whole wheat flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 2 3-ounce mint-flavored chocolate bars, chopped


Preheat oven to 350°. Line two baking pans with parchment paper.

Beat butter and sugars until smooth and creamy.

Add pudding mix, mint extract, and eggs and beat until combined.

Add flour, baking soda, and salt and mix until fully incorporated. Add chocolate chunks and mix again.

Use an ice cream scoop to drop cookies onto baking pans. Leave plenty of space in between, as cookies will double in size.

Bake for 18 minutes, or until centers look like they’re just set. Remove from oven and leave on baking sheets an addition two minutes to continue setting the centers.

Transfer to wire rack to cool completely.
