No-fry fried rice

This faux fried rice dish is packed with flavor and short on prep time.

Many restaurants offer a choice of fried or steamed rice. And what a dilemma: The fried rice has a deep, golden color and is loaded with colorful veggies. The steamed is plain white rice. So yeah, tough choice. Especially if you’re like me and try to avoid fried foods.

This no-fry fried rice recipe is the best of both worlds – it yields a delicious, colorful and appetizing rice with no frying involved. You can even skip the drizzle of oil and it will work just fine.

Ingredients

  • 2 cups white or brown rice
  • 1 tablespoon olive oil
  • 4 cups water
  • 2 tablespoons teriyaki sauce
  • 1 tablespoon onion soup mix
  • 1 tablespoon freshly grated turmeric
  • 1 red pepper, diced
  • 1/2 cup diced mushrooms
  • 1 cup frozen peas

Directions

Preheat oven to 350° F.

Mix all ingredients in casserole pan.

Cover tightly and bake 1 hour.
