No-bake mochaccino cream pie

There's something about a pie that pairs so perfectly with your morning coffee.

There’s no stopping me when I find a healthier way to whip up decadent baked goods, and if I don’t have to turn on the oven, even better! This no-bake mochaccino cream pie is absolutely delicious. It's creamy, chocolatey, full of my favorite flavor – coffee – and of course, made with wholesome ingredients.

But careful who you tell – when I disclosed to my (not-so-health-conscious) guests that the rich chocolate pie they were devouring was made with avocado and banana, their reaction made me laugh so hard I cried. And I learned my lesson – some secrets are better kept to myself, or shared only with those who would appreciate knowing their chocolate is loaded with healthy fruits!

If coffee’s not your thing, you can substitute mint, raspberry, or milk chocolate. Check out the high-quality chocolate selection at your nearest grocer’s health food aisle and you’ll see flavors like lavender blueberry, lemonberry zest, eclipse (dark, dark chocolate!), and superberry (DAGOBA brand’s selection). My next chocolate cream pie is going to start in the healthy chocolate aisle with the coolest flavor I can find, and that will determine my pie’s flavor.

Ingredients

  • 1 9-inch graham cracker crust
  • 2 avocados
  • 1 ripe banana
  • 1 1/2 tablespoon cocoa powder
  • 1 teaspoon vanilla
  • Pinch of sea salt
  • 1/2 cup coconut milk
  • 1 3-ounce bar coffee-flavored chocolate
  • Honey or maple syrup, to taste
  • 2 cups whipped cream
  • 2 teaspoons instant coffee granules
  • 2 tablespoons honey
  • Extra chocolate pieces, for garnish

Directions

Combine avocado, banana, cocoa, vanilla, salt and milk in a small bowl. Use an immersion blender to blend until smooth.

Heat chocolate in microwave until just starting to melt. Stir until smooth, and add to remaining ingredients. Mix thoroughly. Taste, and add more honey or maple syrup to your sweet preference. Pour mixture into prepared pie crust.

Dissolve coffee granules with a few drops hot water. Add 2 tablespoons honey and stir until smooth. Add half of the whipped cream to this coffee mixture and stir gently. Spread over chocolate mixture.

Top with remaining whipped cream and chocolate shavings for garnish. (Run a peeler along the edge of a chocolate bar to create chocolate curls or shavings. Sprinkle over pie.)
