No-bake mini lime cream pies

Treat yourself to a personal-sized pie with big flavor with these luscious desserts.

I haven’t met too many people who don’t swoon when they hear the words key lime pie. But honestly, key limes are hard to find, and most recipes call for spending about half a day in the kitchen. Enter yours truly, with a quick and easy way to whip up amazing lime cream pies. And no, we’re not calling them key lime pies because they don’t have key limes in them. But if you want to go searching for key limes, and squeezing and zesting all those tiny fruits, by all means – change the name!

You’ll want to buy a full bag with about 10 limes for this recipe, which will give you a few extras to use as garnish – and maybe even a light cocktail to go with your pie!

Ingredients

    Filling

  • 16 mini graham cracker pie crusts
  • 2 8-ounce packages Neufchatel cheese
  • 1 can sweetened condensed milk
  • 1/3 cup fresh-squeezed lime juice
  • 1 tablespoon lime zest
  • 1 teaspoon vanilla extract
  • Topping:

  • 2 cups chilled heavy cream
  • Juice and zest of 1 lime
  • 1/2 cup powdered sugar
  • 1 lime, thinly sliced

Directions

(Note: To get the best tasting zest and the most juice from your limes, wash and dry thoroughly, and then press down hard on each one as you roll it back and forth on the counter to release the juices. This will make it easier to get out every last drop of zesty lime juice!)

In a stand mixer, whip heavy cream until stiff peaks form, and then transfer to a medium-sized bowl. Take about 2/3 of the whipped cream, and place in a separate small bowl.

Without washing your mixer bowl, add both packages of cheese, condensed milk, lime juice, zest and vanilla. Beat until smooth.

Gently fold cheese mixture into cream until thoroughly incorporated. Divide batter among pie crusts.

For topping, mix remaining lime juice and powdered sugar and stir until smooth. Fold into remaining whipped cream and blend thoroughly.

Place a spoonful over each pie, and smooth out. Garnish with extra lime zest, and or lime twists.

To make lime twists, slice lime as thin as you can get it. Cut almost all the way through each slice, and then twist and place in the center of the pie.
