No-bake chocolate eclair cake

This luscious no-bake cake will take you back to the eclairs of your childhood on the first creamy bite.

It stymies me that one of the most popular dessert treats of my childhood has gone AWOL. I can clearly remember our excitement when my mom brought out Rich's Eclairs for dessert. It was one of our favorite treats – even if they were often served partially frozen.

As a home cook who loves tinkering in the kitchen, I've created my own homemade eclairs with fabulous results. But this recipe takes it a step back. When you don't have time to tinker, but want to produce something special for your guest or your family, this no-bake cake is perfect. Using store-bought ingredients and just a few minutes in the kitchen, you'll end up with a gorgeous, creamy and decadent eclair cake.


  • 1 package vanilla pudding cups (6 cups)
  • 1 8-ounce package Cool Whip
  • 2 boxes graham crackers
  • 1 16-ounce tub chocolate frosting


Lay 1/3 of the graham crackers in the bottom of a 9x13 pan. Mix together pudding and Cool Whip in a medium bowl.

Spread half of the pudding mixture over the graham crackers. Top with another layer of graham crackers, and the rest of the pudding mixture.

Lay remaining graham crackers over the pudding.

Melt frosting in the microwave for 30 seconds, stir, and put back in for 15 - 20 seconds or until smooth and pourable.

Pour over graham crackers. Refrigerate overnight to allow crackers to soften.

Slice and serve.

*If you want to work really hard, use 3 small (3.5oz) boxes of instant vanilla pudding mix combined with 3 cups milk. Some say the extra labor makes it taste better. No comment there.
