Mustard greens and grilled chicken salad
Perfectly grilled chicken strips over a bed of spicy mustard greens.
In my (food) book, mustard greens are one of the champions of the garden. In addition to being super high in nutrition, these dark green curly leaves come pre-spiced by nature, with a strong, kicky flavor that is slightly reminiscent of mustard. Adding a few more choice veggies, and then topping the salad with perfectly grilled chicken yields a fabulous meal that works for any occasion – work lunch, weekend dinner or picnic at the park.
- 1 1/2 pound chicken cutlets
- 1 cup Italian dressing
- 3 cups mustard greens
- 1/2 red onion, thinly sliced
- 2 Kirby cucumbers, sliced
- 1 avocado, sliced
- Fresh lime, optional
Pound cutlets to tenderize, and cut into 3-inch strips. Pour about ½ cup dressing over the chicken.
Heat grill and grill cutlets 2-3 minutes per side, or until just done on the inside.
Prepare salad by layering mustard greens, onion, cucumbers and avocado slices. Place chicken strips over salad.
Serve with remaining Italian dressing, or with a few wedges of fresh lime and a dash of black pepper.
