Make your own (vegan) pumpkin spice latte
Here’s a unique take on the well-loved pumpkin latte with a healthful vegan twist.
No need for piles of whipped cream or sugar with this pumpkin latte – the flavors of pure pumpkin, coffee and maple syrup are bold enough that you can enjoy this drink straight up. And enjoy you will! Our vegan pumpkin spice latte has a unique, less sweet taste than most lattes, and is a perfect hot drink to start or end your day (without the sugar buzz that accompanies the coffee shop version).
- 1/4 cup pumpkin puree
- 1/4 cup maple syrup
- 3 teaspoons instant coffee granules
- 1 teaspoon pumpkin pie spice
- 1 teaspoon vanilla
- 2 1/2 cup unsweetened coconut milk
- Small strainer
- Handheld frother
Special equipment (optional):
Mix first four ingredients in small pot until smooth. Heat on low flame and stir constantly for several minutes.
Add coconut milk and continue stirring until heated through.
Pour the latte mixture over a strainer directly into a mug (keeps out the little bit of pumpkin sediment), and use the frother to create foam at the top.
