Lemon za'atar vinaigrette
This zesty dressing pairs well with a tossed green salad, or drizzled over ancient grains.
My favorite meal of the day is lunch, and my dish of choice is a huge green salad. It goes without saying that I appreciate a great dressing, and I’ve created many over the years.
This lemon za’atar vinaigrette is something just a little bit different. The fresh, citrusy lemon flavor is complemented by the Mediterranean spices in za’atar – a blend of hyssop, sesame seeds, chickpea powder, and coriander.
For a truly authentic Mediterranean salad, add some olives, Israeli feta and whole chickpeas – creating a filling and nutritious meal in one bowl.
- 1/2 cup curly parsley, finely chopped
- 1/3 cup olive oil
- 1/4 cup honey
- 1 tablespoon lemon zest
- 1 tablespoon za'atar spice
- Salt and freshly ground black pepper, to taste
Place all ingredients into a cruet or small glass jar. Close lid tightly, and shake until all ingredients are combined.
Taste and add more salt and pepper to suit your taste.
Vinaigrette will stay fresh in the refrigerator for several weeks.
