Lemon parmesan Brussels sprouts

We admit it. Brussels sprouts aren't the prettiest foods ever to grow out of the ground. But they are so delicious when they're cooked the right way and make a great side dish. This simple recipe highlights their natural flavors by brightening it up with fresh lemon juice.
- 1 1/2 pound Brussels sprouts
- 1 small lemon
- 1 tablespoon olive oil
- 1 tablespoon shaved parmesan cheese
- Chopped parsley
Trim the ends of the Brussels sprouts, and slice them in half, peeling away any bad leaves.
Add the Brussels to a large mixing bowl with 1 tablespoon of olive oil.
Cut the lemon in half. Squeeze half of the juice over the Brussels and mix.
Place the Brussels on a parchment lined baking sheet so it is a single even layer. Bake them at 400 degrees F for 40 minutes, until tender, mixing once.
Serve the baked Brussels with parmesan and parsley. Slice up the remaining lemon and top for garnish.
