


Lemon ginger s'mores
Your favorite campfire treat goes gourmet with candied lemon slices and chewy gingersnaps.
S’mores are as much a part of summer as sunburns and juicy watermelon slices. Each year, we look forward to building up a small fire in our fire pit and roasting those good old chocolate s’mores. But truth is, they’re a bit sweet for my taste. So this year we changed it up by introducing a tart, kicky, yet still deliciously gooey and satisfying, summer s’more.

Ingredients
- 1 bag large marshmallows
- 1 package ginger snaps
- 2 small lemons, sliced
- 1/2 cup sugar
- 1/2 cup water
- Wooden skewers
Directions
Heat sugar and water in a small pot. Add lemon slices and allow to simmer and boil down for 30-45 minutes.
Remove lemon slices with a slotted spoon and transfer to parchment paper. (For a cool sugared look, sprinkle cooled lemon slices with more sugar.)
Roast marshmallows in a fire pit (or over a tea light at your kitchen table!).
To assemble, place a lemon slice on a ginger snap, press down hot marshmallow over the lemon slice, and top with a second ginger snap. Enjoy warm!
