


Kiwi salad
This versatile, bright fruit looks great on a salad, and tastes even better.
The kiwi is my go-to winter fruit. It's tangy, bright, and easily keeps my mood up when those winter days get cold and gloomy. Plus it is super delicious.
I think most people avoid kiwifruit because it is a bit difficult to peel. Well, maybe not difficult but it isn't easy. And if you do it wrong, you can end up wasting a ton of fruit. The method I use the most when it comes to kiwis is the spoon method. You can see that method and a few others in this fun little video on how to peel kiwifruit.
Also, the kiwi is way more versatile than one might think. Kiwi salsa is a favorite. Let's face it, it's hard to beat a summer tomato and I am not even going to try! I suggest you try this kiwi salsa if you are looking for new recipes.
Ingredients
- 4 kiwi fruit
- 1/2 ruby red grapefruit
- 1 banana
Directions
Trim the ends of the kiwifruit, peel them, and cut the fruit into slices. Thick slices, more than a quarter inch thick.
Cut the individual grapefruit slices into slices.
Cut the banana into slices.
Because kiwifruit can get beat and mushy rather easily, I suggest you lay the salad out more like a platter rather than tossing it. Just combine all ingredients, chill and serve.
