Kale, leek and feta patties

Sweet leeks and softened kale make a fabulous combo in these savory fried patties.

At a recent dinner party, the hostess served absolutely out-of-this-world leek patties. I knew it was a recipe I would try to mimic at home, but in my own way. This combo merges sweet leeks and softened kale, with a little feta cheese for an even more intense flavor. But don’t take my word for it – fry up a batch of these kale leek patties and watch ‘em disappear before they even hit the table.

Ingredients

  • 1 large onion, diced
  • 1 bunch leeks, sliced
  • 3 cloves garlic, minced
  • 1/2 cup breadcrumbs
  • 4 eggs
  • 6 cups chopped kale
  • 1/2 cup crumbled feta (optional)
  • Oil, for frying
  • 1-2 teaspoon salt
  • 1/2 teaspoon pepper

Directions

Sauté onions, leeks and garlic in oil until golden and fragrant, approximately 15 minutes. Transfer to medium sized mixing bowl.

Sauté kale in the same pan until just softened, and then add to onion leek mixture.

Add eggs, bread crumbs, seasoning and feta (if desired) and mix well. Season, taste and adjust.

Heat a tablespoon of oil in the frying pan. Form patties and fry for 2-3 minutes on each side.

Serve immediately.
