Kalamata olive pita pizza
Mediterranean-style pizzas made easy using oversized pitas or tortillas.
When I crave intense, savory flavors I know I can count on Mediterranean foods, including olives and salty feta cheese. These Kalamata olive pizzas use oversized whole wheat pitas or tortillas for a base, and combine olives, feta and plenty of sweet red onion for fabulous tasting, crispy pizza slices.
- 5 large whole wheat pitas or tortillas
- 5 tablespoons Italian dressing
- 1 jar marinara
- 1 jar Kalamata olives
- 1/2 cup feta cheese
- 1 cup shredded cheese
- 1 red onion, thinly sliced
- 1 artichoke, optional
- crushed red pepper flakes
- Italian seasoning
Place pizza stone in oven. Preheat oven to 425° F.
Brush crusts with Italian dressing. Spread marinara over pitas.
Sprinkle lightly with shredded cheese and feta.
Fill in generously with sliced onion.
Slice olives in half, and place several on each pizza. Add artichokes, if desired.
Shake a dash of Italian seasoning and crushed red pepper over pizzas.
Bake 7 - 8 minutes, or until cheese bubbles.
