Hummus cucumber toast
Toast can be fancy as well as healthy.
Oh, how I love fancy toast. It's a bit ridiculous but I love food that is as visual as it is tasty. This toast is definitely that. It's also quite healthy.
- Multigrain bread
- Fresh dill
- Olive oil
- Sea salt
- Freshly cracked pepper
Using a mandolin slicer, thinly slice strips of cucumber lengthwise.
Toast a slice of the multigrain bread and then spread a heaping amount of hummus on it.
Roll the cucumber slices and place them on top of the hummus.
Top with fresh dill, olive oil, salt and pepper.
