Grilled fruit is a summertime favorite. It's easy to do and so delicious. This particular combo is one you are sure to love. I don't provide any real measurements for this recipe because it is as easy to make one as it is to make 10.

And for anyone who immediately eschews dessert recipes because they're watching their diet, remember: better a plum than a cookie.

Ingredients

  • Plums
  • Grapeseed oil
  • Vanilla ice cream
  • Honey
  • Crushed pistachios

Directions

First off, you want plums that are ripe but firm. You need to be able to halve them and remove the pit, but without the plum falling apart.

Once they are halved, brush the cut side with grape seed oil, or any neutral oil.

Place the plums cut-side down on the grill and grill them for 2 minutes.

Transfer the plums to a bowl. I usually do 1 plum per 1 scoop of ice cream, but the ones in this photo were small, so I did one and a half.

Top with a heaping scoop of vanilla ice cream, then drizzle it with honey and top with pistachios. Eat immediately.
