Grapefruit salad lettuce bowls

A unique salad gets even more character with an edible lettuce bowl.

  • Yield: Serves 4-6
  • Prep time: 15 minutes

It may be cold and gray outside, but this salad will sure brighten things up. Plus, the fact that it's served in edible lettuce bowls just makes it fun to eat!


  • 2 ruby red grapefruit
  • 2 small zucchini
  • 1 avocado
  • Olive oil
  • 1 teaspoon lemon juice
  • Salt and pepper to taste
  • Iceberg lettuce
  • Parsley


Peel the grapefruit. Removing as much pith as possible, cut the grapefruit slices in wedges.

Peel the zucchini. Quarter the zucchini length wise and then cut into wedges, about the same size as the grapefruit.

Add the grapefruit and zucchini to a large mixing bowl and mix with enough olive oil to just lightly coat, plus the lemon juice. Salt and pepper to taste.

Halve, pit, and slice the avocado into similar size chunks. Fold into the salad.

Serve the salad inside iceberg lettuce leaves and topped with parsley.
