


Grape tomato zoodles
Zoodles, or zucchini noodles, are the star of this show.

This zoodle recipe is easy to make, filling, but very healthy.
Ingredients
- 1 tablespoon olive oil
- 3 cloves garlic, minced
- 1 pound grape tomatoes
- 2 large zucchini
- Pinch of crushed pepper flakes
- Pinch of salt
- Cracked pepper
Directions
Warm the olive oil over a medium-low heat.
Add in the garlic and salt.
Cut the grape tomatoes in half. Here is an easy trick for slicing many tomatoes at once.
Turn the heat up to medium high, add in the crushed pepper and some cracked black pepper. Cook until the tomatoes have softened and began to release their juices.
Run the zucchini through a spiralizer, using the medium thickness.
Add the noodles to the tomatoes and sautee for about 2 minutes, until just tender.
