Easy vegan green goddess dressing
Bursting with the flavors of fresh herbs and tart scallions, this dressing is a great topping for garden salads or as a delicious chip dip.
I had a close friend growing up whose mom stayed at home to raise their six kids, yet still had time to create all kinds of homemade goodies. Her pickles were out of this world, as was her version of green goddess dressing.
To satisfy the vegans in my family, I decided to create my own version of this delicious dip/dressing. And it came out as wonderful as I expected – much lighter than the mayo-based ones, and still every bit as tasty.
- 1 package silken tofu
- 3-4 scallions, trimmed
- 1 cup loosely packed curly parsley
- 3-4 tablespoon white wine vinegar
- 1 tablespoon garlic powder
- Salt and pepper to taste
Place all ingredients in a blender. Blend until smooth, scraping down the sides as needed.
Taste, and add more seasoning if needed. Refrigerate and use within 3 - 4 days.
