Dragon fruit margarita smoothie

The creamy speckled flesh of this fiery-colored fruit is a natural base for this cocktail.

I can roam the aisles of my neighborhood’s international farmers market for hours (when I’m not in a rush) taking in the amazing display of fruits and vegetables of all colors, shapes and flavors from around the world.

Dragon fruit is definitely one of those fruits that stops you in your tracks. When you’re finished marveling at its fiery pink and bright green colors, you slice it open to find a black and white speckled flesh with a delicate, slightly milky taste.

I’ve blended the flesh on its own to create a very simple (but attractive!) dragon fruit smoothie, but in this recipe I’ve added a few easy ingredients to turn this fruit into a very unique party drink – a dragon fruit margarita smoothie.

Ingredients

  • 2 large dragon fruit
  • 1 teaspoon fresh lemon or lime juice
  • 1 teaspoon vanilla
  • 1/8 cup tequila or vodka, optional

Directions

Wash and dry dragon fruit. Slice off one round slice from each of the fruit and set aside, and then scoop out all remaining flesh.

Place all ingredients in blender or Vitamix and process until thoroughly combined.

Serve in margarita glasses with a wedge of dragon fruit on the rim.

For frozen margaritas, freeze dragon fruit chunks overnight. Blend with remaining ingredients and serve immediately.
