Creamed corn and vegetable casserole

When you’ve got no time to fuss, this tasty vegetable side dish is the recipe you want.

No need to go on and on with the virtues of this recipe; the three-ingredient list and super-short instructions speak for themselves. It’s the easiest vegetable side dish you can make at home and still look like you invested some effort. The combination of sweet corn, crunchy colorful veggies and crispy onion topping yields a delicious casserole perfect for picnics, barbecues or even a steak dinner.

Ingredients

  • 1 bag frozen California mix (cauliflower, carrot, broccoli), defrosted
  • 1 can creamed corn
  • 1 cup French’s dried fried onions

Directions

Preheat oven to 350° F. Grease a small casserole dish.

Pour veggies into casserole dish. Pour creamed corn over veggies. Sprinkle with dried onions.

Bake for 15-20 minutes. Serve warm.
