Citrus and shaved root salad

Experience the winning pair of beets and citrus in this fresh, light and highly wholesome salad.

Beet and citrus is a winning combo. The brightness of any citrus fruit just lifts the earthiness of beets to a delicious level, like with these beet and orange popsicles. This salad adds in some other roots to take that combo in a fun new direction. The key to this salad is to get the beets shaved as thinly as possible. Almost paper thin.


  • 1 tablespoon lemon juice
  • 1/2 teaspoon white wine vinegar
  • 3 radishes
  • 1 large beetroot, peeled
  • 3 tangerines
  • 1/3 cup arugula
  • Sea salt
  • Freshly cracked pepper


Using a mandolin, thinly shave the beetroot and radishes on the thinnest setting.

Peel the tangerines, separating the slices, and removing as many seeds as possible.

Add the tangerines, arugula, and radishes to a large mixing bowl.

Add in the lemon juice and vinegar, toss until completely coated.

Salt and pepper to taste.

Fold in the shaved beets.

Chill and serve.
