


Cilantro cauliflower rice
Turn cauliflower into rice, just like that.
For many people, rice is a staple. This simple cauliflower recipe is a great way to increase your vegetable intake if you eat a lot of rice. I keep this around for tacos, to toss into salads, and even put a fried egg on top of for breakfast. It is super easy, healthy and delicious.
Ingredients
- 1 small cauliflower
- 1 small broccoli
- 1/3 cup chopped cilantro
- 2 tablespoons olive oil
Directions
Break the cauliflower up into florets and chop up the broccoli stalk.
Using a box grater or a food processor, shred the florets and stalk into rice size bits.
Warm the olive oil over a medium heat in a large skillet.
Add in the broccoli and cauliflower, mixing until all of it is coated in oil. Cook for about 5 minutes, just until the broccoli starts to brighten and the "rice" is tender but firm. If you overcook it, it will break down and get mushy.
Remove from heat and mix in the cilantro.
Transfer to a serving bowl and fluff with a fork.
