Chocolate chip s'mores sticks

Take your cookie baking to the next level with these quick and easy s’mores cookie bars.

Better than the best chocolate chip cookie recipe, this quick and easy s'mores recipe can be made in less than 15 minutes, and will wow the lucky recipients. The marshmallow melts and gets sticky and chewy, but coated with chocolate chip cookie dough your teeth and fingers are well-protected!


  • 2/3 cup butter or Earth Balance, melted
  • 2 1/2 cup graham cracker crumbs
  • 2 cups mini marshmallows
  • 1

  • 16-ounce tray prepared chocolate chip cookie dough (or about 2 cups prepared cookie dough)


Preheat oven to 350. Line a 9x13 baking pan with parchment paper.

Combine melted butter and graham crumbs in a bowl, and then press into pan. Bake for 15 minutes.

Remove pan from oven, and scatter mini marshmallows over crust. Press cookie dough over marshmallows, and return to the oven for another 22-25 minutes. (I found it helped to transfer the prepared cookie dough onto a piece of parchment, and roll it out slightly with a rolling pin, then turned it back over onto the marshmallows and crust.)

Lift parchment from pan and transfer to wire rack to cool. Use a pizza cutter or serrated knife to cut into cookie sticks.
