Chocolate chip cookie dough ice cream sandwiches

Feel like a kid again with these simple, fun treats that won't make you chase down the ice cream truck. (But you still want to.)

Truthfully, I think the picture says it all, but I’ll say more. There are times in life, particularly in summer, when you just need to indulge in something rich, cool and chocolatey. No guilt, no hesitation, just sheer enjoyment. Make memories, make it fun, make it delicious.

With these homemade chocolate chip cookie sandwiches, you’re doing all that. And with just 3 simple ingredients, it doesn’t get easier.


  • 10 large chocolate chip cookies
  • 1 pint cookie dough ice cream, frozen solid
  • Mini chocolate chips, optional


With food-safe scissors, cut into the ice cream container on two opposite sides. Carefully pull away the paper to reveal the ice cream.

Slice five equal-sized round slices of ice cream. Place a slice on each cookie, and top with another cookie. Press down, and use a spoon if needed to smooth out the sides.

Pour mini chips into a shallow bowl or plate. Roll ice cream sandwiches in chips until sides are coated.

Serve frozen.
