


Chipotle breaded and baked cauliflower florets
Bite into flavor, crunch and fun with these tasty and zesty cauliflower florets that make an awesome snack.
I’m always looking for alternatives to the delicious comfort foods that traditionally aren’t so healthy – but they’ve got to be delicious, easy to make, and have universal appeal. Enter the chipotle pepper – it’s got a lovely kick, but not too hard, and adds wonderful flavor to the otherwise gentle flavor of cauliflower.
Breading these babies makes them quite filling, and much more fun to eat. Add a little dipping sauce and you can practically call it a party! (Mix light mayo with a couple tablespoons of that same chipotle mustard, a splash of coconut milk, and voila – a great sauce.)
Ingredients
- 1 head cauliflower
- 2 eggs
- 4 tablespoons chipotle mustard
- 2 cups panko bread crumbs
- Salt, pepper garlic powder to taste
Directions
Preheat oven to 400. Line a large baking sheet with parchment paper.
Separate cauliflower florets, rinse, and pat dry.
In a large bowl, beat eggs and chipotle mustard until fully combined. Add florets, and toss to coat.
Dip each floret into bread crumbs to coat, then place onto baking sheet.
Bake for 20-25 minutes, or until florets are golden.
