Chickpea and heirloom tomato salad

Colors burst and flavor abounds in this crisp, vibrant salad made with farm-fresh heirloom tomatoes.

  • Yield: Serves 4-6
  • Prep time: 10 minutes

Heirloom tomatoes are wonderful treat, and if you can find heirloom cherry tomatoes at your farmers market, buy them all! OK, maybe not all of them, but enough to make this delicious salad.


  • 2 tablespoons olive oil
  • 1 15-ounce can chickpeas
  • 2 pints heirloom cherry tomatoes
  • 1/4 cup loosely chopped parsley
  • 1 tablespoon balsamic vinegar
  • 1 teaspoon minced shallot
  • Sea salt
  • Freshly cracked pepper


Whisk together the oil, vinegar, shallot, salt and pepper in a large mixing bowl.

Slice the cherry tomatoes and add them to the bowl. Here is an easy way to slice all of the tomatoes at once.


Add in the chickpeas.

Mix until everything is coated, adding more salt and pepper if needed.

Add in the parsley and lightly mix.

Chill and serve. Enjoy!
